It’s been tough to be super motivated to cook when I don’t get home for work till 6:00. After cooking, eating, and clean up it seems like it’s 8:00 and your night is gone. But I’m still trying to find ways to make it happen. Here are some recipes I’ve tried lately.
Lasagna Pasta – I actually made this one while I was visiting my brother in Austin but it still fits the description of quick, easy, and delicious.
Slow Cooker Mexican Pot Roast – this one was delicious and easy. I oven prep slow cooker meals the night before so I can just start it right before I leave for work. (Or, have Josh start it, because he leaves for work a little later than me and is a rock star…)
Chocolate Chip Zucchini Cookies – we grew some zucchini this year and had high hopes that we’d have a large harvest. We didn’t have the luck we’d hoped for but we did kick out 1 or 2 squash – 1 of which I used to make these cookies. I’m sure they aren’t healthy but you feel a little bit better about yourself than the average cookie.
Clean Eating Easy Crock Pot Roast with Potatoes and Carrots – this is a more traditional pot roast recipe. I know what you’re thinking… that’s a lot of pot roast. Here’s why: I’m trying to branch out and use meats other than chicken, we had some carrots from our garden we wants to us, and crock pot (‘nough said.) This was a hit, too.
That’s all I can think of for now. But here are a few new recipes that I WANT to try.
